My drive to always eat well is driven by a simple mantra: ‘why eat something if it doesn’t taste great!’ Thus for most of my life I have hunted and gathered the best produce I could in order to ‘feed’ my passion to cook and eat well.
My grandmothers and mother were all good cooks. Between the three of them I could enjoy a delicious apple pie, a chocolate éclair (my favourite) and the best corned silverside. I still have recipes from all three ladies that are pasted into one of my many cook ‘scrapbooks’. I rarely use a cookbook preferring to source from magazines, television shows, and the internet. When I am on holidays I try to eat lots of different cuisine in order to add to my collection of recipes.
Over my 58 years, I have cooked for family, friends, wedding guests, corporate clients, students of all ages, and my customers. I have always enjoyed the menu planning and the joy that good food can bring to people when they have had a great experience- especially if they have assisted in the preparation.
My cooking style is simple- tasty dishes using techniques from all cuisines depending on what’s locally available, what I crave, what I have bought during a trip away, and the season. A typical day in the city would see me bounce across town sourcing sourdough, coffee, Asian and Indian food products, fish from the fishmonger, meat from the butcher, and deli items. These are taken home and complemented by the foods I can buy locally which I do so each week.
My current favs are rice noodles, anything with chilli in it, my Mexican tortilla press, and hopefully a Gozney pizza oven- but that’s on the quiet!
